20 Sheet Pan Meals Perfect For Spring

What is easier and better than a sheet pan meal? We love the simplicity of slapping a bunch of ingredients together, throwing them on a baking sheet, and putting them right in the oven — and knowing that we're using a pretty darn healthy cooking technique that takes very little effort. Sheet pan meals are an amazing answer to weeknight cooking, when we just have 15 minutes to put together a meal for the whole family (and let's be honest, not even that, but we have to find time anyway). Although we adore using an Instant Pot for superfast meals, sometimes we don't want that Instant Pot texture — it's just nice to have crispy edges and a crackling crust. Same with the joys of the slow cooker — as much as we love to "set it and forget it," we also sometimes want crispiness, not mushiness, right?

We also have this life-saving pro tip: Trying to remove gunk that's been baked onto a sheet pan is nearly impossible. Instead, we love lining sheet pans before throwing them in the oven, which makes cleanup basically a 30-second process. There are a few options for lining baking sheets. Parchment paper is the most elegant choice just because it looks so pretty and makes things so greaseless; it works well for a lot of these recipes. There's also aluminum foil, which is extremely useful in the kitchen, not to mention it's a material that's very easily recycled. That makes it an environmentally wise purchase — although there are some ingredients that will tend to stick to aluminum that won't stick to parchment. Then there are silicone mats, which are BPA-free (no worries there) but are a bit of an investment at the outset. We think they're well worth the money, however, because we can use them over and over again with a quick wash (and stuff doesn't tend to stick to them much at all).
