We love Mother's Day around here. Moms are generally the unsung heroes, and while we deserve attention for our overall awesomeness on more than just this one day a year, we totally believe that Mother's Day is a great idea overall. It's nice to set aside some real time to show each other how much we love one another (and to receive a little much-deserved attention ourselves). That's why we're big into Mother's Day. But while we love this holiday absolutely, that doesn't mean we suddenly have a million jillion hours to devote to it. If there aren't enough hours in the day to plan something extraordinary, consider just picking up a special Mother's Day card to let mom know how your feel and create a simple brunch using one of these ridiculously easy recipes.
We picked recipes that can be made the night before, recipes that take just five minutes of prep, and a lot of recipes that are that awesome semi-homemade thing where we just pick up a little frozen dough and pretend like we did everything ourselves, because honestly, who in their right mind makes puff pastry other than actual pastry chefs? The frozen stuff is just as good, no lie. To go with brunch, consider picking up one a super-hip Mother's Day gift if the mom who is being celebrated is in the under-35 crowd, or consider a different type of gift for moms with kids under 5. Relatedly, consider picking up a gift to make a working mom's life easier. Whatever happens, celebrating the great moms out there should be the focus.
Easy Overnight French Toast Casserole
This one requires a little advance planning, but this easy overnight French toast casserole is so completely easy (and mind-blowingly delicious) that it's absolutely worth taking care of the (minimal) prep the evening before.
Easy Cinnamon Rolls
These easy cinnamon rolls are a semi-homemade option for when making cinnamon rolls from scratch is just not gonna happen (so, like, always, for us). They're still ooey-gooey deliciousness — and perfect for Mother's Day.
Denver Egg Casserole
While we love a traditional Denver omelette, this Denver egg casserole is way easier than learning how to perfectly flip an omelette, and feeds a whole crowd while only taking a few minutes to prepare.
Chrissy Teigen's Everything Bagel Cream Cheese Breakfast Bake
How much do we love Chrissy Teigen? She shuts down body shamers, she keeps it real as a mom, and she's an amazing cook. Can she be our BFF already?! Chrissy Teigen's everything bagel cream cheese breakfast bake is absolutely delicious.
Simple Shirred Eggs With Cheese Recipe
Shirred eggs sound and look fancy, but the truth is, they're incredibly easy to make. This simple shirred eggs with cheese recipe is baked in little individual dishes to create a perfect combination of flavors.
Avocado Toast With Spinach & Egg
Avocado toast with spinach and egg feels so on-trend, but it's also really easy to make. It's worth buying some good-quality, fresh bread from the bakery for a special occasion like Mother's Day, too (but it's easy enough to make with regular bread the rest of the year).
Crescent Bacon Breakfast Ring
Perfect for a Mother's Day brunch, this crescent bacon breakfast ring is so festive, but it uses canned refrigerated crescent rolls, which makes it super easy to put together. The egg wash is optional but it makes the rolls really glossy and only takes an extra minute.
Shakshuka
Shakshuka is a delicious, easy, vegetarian breakfast recipe native to Israel, as well as other parts of North Africa and the Middle East. It's also a great use of leftover roasted vegetables, which can be mixed in.
Breakfast Granola Fruit Tart With Yogurt
This breakfast granola fruit tart with yogurt is so easy, colorful, and healthy, but if time is of the essence, it's easy enough to substitute the homemade granola tart crust with a premade frozen shell.
Eggs Florentine Casserole
Eggs Florentine is such a wonderful dish to order at brunch restaurants, but it's really hard to pull off properly at home because the timing just never really works out. This eggs Florentine casserole is an amazing solution for a whole crowd.
Southwestern Sausage & Cornbread Breakfast Casserole
This Southwestern sausage and cornbread breakfast casserole is a great use of leftover cornbread, and it's an absolutely delicious crowd-pleaser. Tastes great as-is, but also can be made vegetarian easily by using soy sausage.
Easy Breakfast Chilaquiles
We love this easy breakfast chilaquiles because the recipe is so forgiving of substitutes. If cotija cheese isn't available, for instance, it's totally fine to use a shredded Mexican blend, and if making a homemade salsa verde isn't going to happen, just use jarred!
Easy Hash Brown Breakfast Casserole
This easy hash brown breakfast casserole is naturally gluten-free, and is an inexpensive way to feed a crowd. It also freezes well, in case there's time to make it ahead of time. Make DIY hash browns or use frozen hash browns — whichever makes the most sense given the schedule.
Easy Belgian Waffles
It's not as easy as from a box, to be sure, but these easy Belgian waffles are simple to make and only require a small handful of ingredients. The prep time is 10 minutes and it only takes five minutes to cook, too.
Angel Food Cake French Toast
Angel food cake French toast tastes really decadent — it's made with premade cake from the grocery store, after all — but we can pretend it's healthy because of all the fruit. "It's like biting into a crunchy cloud," the recipe author writes, and we couldn't agree more.
Fruit & Cream Cheese Breakfast Pastries
Use frozen puff pastry in these fruit and cream cheese breakfast pastries and they'll be made in just a few minutes — and don't take long to bake, either. We love the tart flavor of the cream cheese with the sweetness of the berries.
Blueberry Goat Cheese French Toast
This blueberry goat cheese French toast recipe sounds really fancy, but it's really simple — no more work than regular French toast, which is one of our favorite easy breakfasts, too. Switch it up with raspberries or strawberries to make it extra special for Mother's Day.
Bacon Cheddar Popovers
Quick and foolproof, these bacon cheddar popovers take just five minutes of prep time. Great paired with a little breakfast salad — maybe baby spinach with blackberries and goat cheese — or a regular fruit salad.
Bacon & Egg Gruyere Breakfast Tart
This bacon and egg Gruyere breakfast tart is basically a breakfast pizza, and it looks and feels fancy, but is super simple to make — just use frozen puff pastry! Cook a little less long for a runnier yolk, and a bit longer for a harder yolk.
Sunday Morning Pineapple Upside Down Pancakes
These Sunday morning pineapple upside down pancakes are absolutely amazing. Feel free to sub out the pancake batter with boxed batter, too. Would be great served with a little crispy bacon or pancetta.
