We don't get every food trend, and that's a fact. When it came to kale, we were not totally 100% into it — the stuff is bitter, right? We're not making it up. And any vegetable that's so needy that it has to be literally massaged before the texture is remotely enjoyable is a little too high maintenance for us. But when it came to the overnight oat craze that happened a few years ago, we were totally on board. And we're super into the fact that it's back with a vengeance right now, too — just in time for summer.
Here's the deal with overnight oats: They're basically just oatmeal (shh, don't tell the kids that) but they're just made the night before. They're not even really made — unlike regular oatmeal, there's no heating involved, so kids who are allowed to use some kitchen tools can make these themselves.
Basically, just stir together all the ingredients, and in the morning, there are little jars filled with creamy, rich, indulgent-tasting overnight oats in the fridge. We have 20 different flavor combinations below — including some we swear we've never, ever heard of or thought of before — but really, once we got the hang of making it, overnight oats has become one of those recipes we end up experimenting with and spinning off for years.
Entice kids to eat well this summer with healthy cookies for breakfast, to feed them literal cookies without the guilt. Or, make mornings easier with healthy breakfast smoothies, which are great for anyone who has to run out the door. And, because saving money is always a bonus, try some make-ahead breakfasts on a budget.
Of course, oats are generally budget-friendly, so it makes sense to use them as the base and add some more expensive ingredients as toppings and flavorings.
