DIY Italian Cream Soda

I could down Italian cream soda by the gallon.

It's not your typical cream soda: This one is homemade using soda water, flavored syrup, and cream or milk.

I used to drink them all the time when I lived in Harrisburg, Pennsylvania, thanks to Cornerstone Coffeehouse where my sister worked. She made them just right, and I had to restrain myself from gulping it down.

Since moving to NYC, there are very few places I can find them. They make them at Crumbs but that's a hike for me.

So, I started making them myself with homemade vanilla syrup.

Italian Cream Soda

  • 8 oz unflavored soda water
  • 2 oz vanilla syrup
  • 2 oz milk or cream

Combine soda, vanilla syrup, and milk or cream to taste. Stir, don't shake. Add ice. Enjoy.

Vanilla Syrup

  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon vanilla extract

In a pot, combine sugar and water. Heat on low until all the sugar dissolves into the water. You shouldn't be able to see any crystals. Remove from heat.

Add vanilla to taste and let cool. Pour into an old clean bottle and set in fridge for vanilla syrup on demand.
