
**Paella is always a crowd-pleasing rice dish because it's so intensely flavorful and satisfying. But if you need to throw together a quick dinner — who has time to collect all that meat and seafood, measure all the spices, and chop all those vegetables?
This easy recipe for Spanish Rice and Chorizo mimics the spicy flavors of traditional paella but cooks in less than 30 minutes from start to finish. The best part? It calls for only seven ingredients.

Spanish Rice With Chorizo adapted from The StoneSoup
- 1 cup long-grain rice
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 tablespoon smoked paprika
- 2-4 links chorizo (or other sausage), sliced
- 1 (14-oz.) can tomatoes, diced
- 6 cherry hot peppers from jar, diced
Cook rice. While rice is cooking, saute onion in a little oil over medium heat in large saucepan. When onion is soft, add garlic and paprika and saute for about 1 minute. Add chorizo and cook until heated through. Add tomatoes and hot peppers and cook for a few minutes until they lose their raw taste.
Over low heat, combine cooked rice and onion-sausage-tomato mixture. Add a little water if mixture is too thick to thin it out. Season with salt and pepper.
