You're probably thinking that pancakes for breakfast are as decadent as it gets, but then you would be incorrect. Check out this recipe for Cocoa Pancakes. It's a tweak on classic homemade pancakes with the addition of just a bit of baking cocoa powder. The best thing about these babies is that they pair perfectly with lots of ingredients — orange slices and powered sugar (try adding fresh-squeezed OJ to the batter!), fresh summer berries, or even banana slices and caramel sauce. For a special morning treat, these pancakes can't be beat.
Cocoa Pancakes
Ingredients
- 3/4 cup flour
- 3 tbsp baking cocoa
- 1 tbsp baking powder
- 2 tbsp sugar
- 1/2 tsp salt
- 1 egg
- 1 tsp vanilla extract
- 1 cup milk
- 2 tbsp butter, melted
Instructions
1. Whisk flour, cocoa, baking powder, sugar, and salt in bowl.
2. In separate bowl, whisk egg, vanilla extract, milk, and butter.
3. Make a well in the flour mixture, and add the milk mixture gradually. Stir gently to form a batter.
4. Heat non-stick skillet or griddle over medium-high heat. Lightly grease bottom of pan with oil. Drop batter by 1/4 cupfuls onto skillet. Cook pancakes until golden brown and cooked through, about 2 minutes per side. Transfer to plates. Repeat with remaining batter.
