Getting through the day is so much easier when you've had a hot breakfast to kick things off, but unfortunately, most of us don't have a lot of time to whip up something delicious and filling during the week.
But after you see this quick and easy recipe for microwave pancakes from Oprah.com, morning meals will get a whole lot more satisfying for your entire family. (That Oprah. She's always on top of things.)
Who doesn't love a stack of hot cakes dripping with butter, syrup, and all sorts of sticky goodness?
Forget busting the griddle out tomorrow morning — all you need is a few minutes, your microwave, and the ability to push the buttons for a yummy complete breakfast.
Microwave Pancakes
Mix a regular pancake batter, pour about 3/4 cup onto a buttered dinner plate, and zap for 45 seconds to 1 1/2 minutes. (Yes, that's it. For real.)
The Oprah.com recipe also suggests topping with the usual condiments for breakfast, or dropping shredded bits of ham and cheese into the batter.
I'm guessing there are plenty of different things you can throw into the mix to give these pancakes a little variation every time you make them — like fresh fruit, chocolate chips, or whatever you're in the mood for. And with all the time you'll save by using your microwave, you'll score a few extra minutes to actually sit down and enjoy a nice breakfast with your family. (Always a plus.)
