Here's a recipe I came across recently that I'd all but forgotten about — strawberry poke cake. My mom used to make these for potlucks and such, and I think it deserves a revival in my dessert rotation.
It's simple and quick, and with fresh strawberries on top, it's a great, light summertime treat. Basically, you take a standard cake, then — as the name suggests — you poke holes in it. You then pour in Jell-O and top it with cream. You can use any flavor of Jell-O you like, or even pudding, which kicks it up another big notch.
Strawberry Jell-O Poke Cake
1 box white cake mix
1 cup boiling water
1 (4-ounce) package strawberry Jell-O
1 cup cold water
Whipped topping (or fresh whipped cream)
Fresh strawberries for topping
Make cake as directed on package.
When cool, poke holes in cake (a clean pen works well).
Mix Jell-O in water as directed on package and pour over cake.
Top with whipped topping and fresh strawberries.
Refrigerate until chilled.
