Slow-Cooked Tequila Lime Chicken Brings the Flavor (& the Booze)

You know what's better than chicken for dinner? Chicken with tequila. Forget what you heard: There's nothing wrong with making a tasty dinner that happens to come with a splash (or two) from your liquor cabinet. (Consider it extra flavor.)

There's something yummy about chicken slowly cooking in tequila that gets you all sorts of excited. Four pieces of pollo (that's Spanish for chicken, in case you didn't know) made days' worth of dinners — including tacos and burritos — that had my family happy. Of course, you don't have to cook with tequila, but it does make things fun!

Slow Cooker (Tequila) Lime Chicken (adapted from recipe on Happy Food Dance)

Ingredients

  • 4 skinless chicken breasts
  • 2 bell peppers, julienned (that's a fancy way of saying cut them into strips)
  • 1/4 cup chopped cilantro
  • 1 1/2 cups chicken broth
  • 1/2 cup tequila  (feel free to omit)
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder

Directions

1. Place all the ingredients inside a slow cooker. Stir a few times, and cook on low for 4–6 hours.

2. Using a cook fork (I use two to make things easier) and a fork or knife, begin to shred the chicken. (If you haven't done this before, insert the fork or knife inside the chicken — to hold steady — and use the cook fork to "scrape" or shred the chicken.)

3. Serve over rice, or make shredded chicken tacos!
