I have always relied on eggs to be an affordable, hearty breakfast for my kids, but now that egg prices are high, I have found myself looking for other protein-rich breakfast recipes without eggs.

The last time I went to the grocery store to buy eggs, my usual two-pack of eggs was nearly $24.

Granted, I buy the really big packs of eggs for my family of seven and I live in Michigan, where a cage-free egg law was enacted, so eggs are a bit more expensive here than other parts of the country — but still, many people across the nation are noticing that egg prices have gone up.

Protein Breakfast Recipes Without Eggs

These breakfast recipes without eggs are all protein-rich to help keep bellies full and provide plenty of fuel for the day.

Plus, protein is good for us moms, too. Protein helps us build and maintain muscle mass as we age. In addition, when paired with other nutrients, like healthy fats and carbs, gives energy for the long days parenting.

I have been on a weight loss journey for health reasons for myself and have found that when I prioritize protein, I feel much better and avoid that “hangry” and ravenous feeling that used to plague me by mid-afternoon. My secret is that I try to get in a protein breakfast so I start the day off right.

Protein Overnight Oats

Overnight oats are one of my favorite breakfast recipes without eggs because they’re incredibly easy to make and very filling. I also love that they can be customized to your taste and preference and they’re easy to take on-the-go, too.

I often make several bowls of overnight oats early in the week and eat them through the week. They’re also convenient to take to sporting events if you have kids in travel sports because they can be eaten cold.

The easiest way to make overnight oats is to mix ½ cup of quick oats with an individual Greek yogurt cup (about 5 ounces). I also add a little bit of milk for creaminess and sometimes a touch of vanilla, cinnamon, or maple syrup for sweetness. Stir together, then put in the fridge overnight so it’s ready to eat in the morning.

Prepared overnight oats will last for several days. When it’s time to eat, add any mix-ins or toppings you want. Good toppings include fruit, coconut flakes, nuts, or even shredded chocolate for an antioxidant boost. My favorite is to add sliced bananas and a touch of peanut butter.

Hearty Oatmeal

If you prefer a warm breakfast, don’t overlook the humble bowl of oatmeal. I love oatmeal, but to pump up the protein content, I stir in unflavored collagen protein powder before cooking.

The protein powder blends right in without any taste, so it’s perfect for this breakfast. You can also add more protein sources like nuts, pumpkin seeds, or even chia seeds.

Protein Smoothie

As a mom of five kids, I was thrilled when I discovered that my kids liked smoothies. Suddenly, I had an easy way to give them fresh fruits and maybe even sneak in some veggies, too!

My kids love making smoothies as snacks, but they’re also a good breakfast without eggs option, too. You can pick up ready-made smoothie packs at the store or create your own smoothies at home. Our family’s favorite is banana-strawberry, but this peach raspberry recipe from Cabot Creamery packs a protein punch thanks to Greek yogurt.

If you want even more protein, add a scoop of your favorite protein powder. Vanilla is usually my go-to because it blends in so well, but I also love chocolate because it always feels like a dessert!

Chia Seed Pudding

If you haven’t tried chia seeding pudding for breakfast yet, you are missing out. I only recently discovered chia seed pudding myself a few months ago, but it’s been life-changing.

Not only are chia seeding incredibly beneficial with health benefits like fiber and antioxidants, but they’re also a decent protein source. (Translation: they can help you stay full and help with weight loss goals!) Chia seed pudding is also tasty and easy to customize.

Prepare chia seed pudding the night before. I mix about 2 tablespoons of chia seeds in a small lidded container, cover it with milk (any type of milk works), give it a good shake, then stick it in the fridge.

Here’s the key: Go back and shake the chia seed mixture within 10 to 15 minutes or the seeds will all stick together and the pudding will be gross.

Just like with oatmeal, you can mix anything you want in your pudding, like:

  • Vanilla
  • Cinnamon
  • Maple syrup
  • Fruit
  • Cocoa powder
  • Nuts

Cottage Cheese Toast
