Easy Chicken Pita Pockets With Veggies

Ingredients
- 1 cup rotisserie chicken, cut into bite-size pieces
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1/4 cup finely diced cucumber
- 1 pita pocket
- Prepared hummus
- 1/4 cup shredded lettuce
- 1 Libby's Vegetable Cup (any variety)
Instructions
- In a mixing bowl, combine the rotisserie chicken with cucumber and season with garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated with the seasonings.
- Carefully slice the pita in half to create two separate pockets.
- Spread hummus inside each pita pocket.
- Stuff each pita pocket with an equal amount of seasoned chicken mix.
- Add a layer of shredded lettuce on top of the chicken in each pocket.
- Serve with carrot sticks, extra hummus for dipping, and a Libby’s Vegetable Cup (I suggest corn or green beans).
