Easy Chicken Pita Pockets With Veggies

Ingredients

  • 1 cup rotisserie chicken, cut into bite-size pieces
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1/4 cup finely diced cucumber
  • 1 pita pocket
  • Prepared hummus
  • 1/4 cup shredded lettuce
  • 1 Libby's Vegetable Cup (any variety)

Instructions

  1. In a mixing bowl, combine the rotisserie chicken with cucumber and season with garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated with the seasonings.
  2. Carefully slice the pita in half to create two separate pockets.
  3. Spread hummus inside each pita pocket.
  4. Stuff each pita pocket with an equal amount of seasoned chicken mix.
  5. Add a layer of shredded lettuce on top of the chicken in each pocket.
  6. Serve with carrot sticks, extra hummus for dipping, and a Libby’s Vegetable Cup (I suggest corn or green beans).
