
Making balanced and delicious lunches for kids can be a challenge. There’s nothing worse than spending time and energy packing a lunch for your little one, only for them to come home and have almost everything left in their lunchbox. Putting together creative lunches that kids will actually enjoy is essential, which is why we suggest getting kids involved in the process. Ask them what they want to eat, bring them grocery shopping with you, have them help pack their own lunches, and keep meals balanced with Libby’s Vegetable Cups! We invited moms to challenge their “Little Chefs” to put together creative lunches using Libby’s Vegetable Cups. Here’s one of our favorite recipes:

That’s why Vicky from @em_vickypham asked her kids to create their perfect, well-balanced school lunch – paired with Libby’s Vegetable Cups! To guide their process, she set the stage by establishing a bento box theme, setting a 10-minute timer, and having judges in place to award an apron to the best chef!
Birdy Tuna Mayo Rice Ball Bento Box

Ingredients
- 1 5oz can chunk tuna in water, drained
- 1 tablespoon Japanese mayo
- 1 teaspoon soy sauce
- ½ cup cooked sushi rice
- 1 sheet seaweed paper
- 1 Carrot
- Lettuce
- 1 (4 oz.) vegetable cup, Libby’s Whole Kernel Sweet Corn
- 2 Chocolate chip cookies
- Cherries
- 1 tablespoon hummus
- 2 pieces of naan bread, sliced in half
- Sharp cheddar, cubed
- Beef jerky
Instructions:
- Add tuna, Japanese mayo and soy sauce to a bowl. Mix together.
- Scoop 1/4 cup of rice into your hand and make a small well in the center.
- Add 2 tablespoons of the tuna filling into the well and cover with surrounding rice. Cup your hand to form a ball. Split remaining rice in half. Repeat twice to make two smaller balls.
- Using the seaweed paper and scissors, cut out circles for eyes and strips to make claws. Cut the small end of a carrot to add as a beak.
- Fill the remaining space in bento box with lettuce.
- Add Libby’s Whole Kernel Sweet Corn Cup, chocolate chip cookies, cherries, hummus, sliced naan Bread, sharp cheddar, and beef jerky to bento box.
Cat Turkey Swiss Cheese Sandwich Bento Box

Ingredients:
- 2 Slices of sandwich bread
- 1 Slice Swiss cheese
- 2 Slices deli turkey
- Carrot
- Lettuce
- 1 (4 oz.) vegetable cup, Libby’s Mixed Vegetables
- 4 crackers
- 3 Ube-covered Oreo cookies
Instructions:
- Make a sandwich by layering one slice of bread, cheese, turkey and top with second slice of bread. Use a circle cookie cutter to cut sandwich into a circle shape.
- Cut triangles from the remaining bread pieces and place them on top.
- Cut the small end of a carrot to add as eyes and a nose.
- Slice lettuce in strips to add as whiskers and triangles for the inner ears.
- Add Libby’s Mixed Vegetables Cup, crackers, and Ube-covered Oreo Cookies to the bento box.
