Ube is the purple Filipino yam that's been grabbing attention for its royal coloring. The yam is combined with sugar, coconut milk, condensed milk, and butter and made into ube halaya, or ube jam. The jam is then used in pastries such as cakes, cookies, and even waffles! It's pretty much just like food coloring, except it's a yam. Here are some of our favorite ube recipes.
