I borrowed this week's Toddler Meal from the mouth-watering baby, toddler and big kid recipe site, Weelicious –it's a recipe for Israeli Couscous Salad.
Now that the weather is getting warmer, a nice and simple pasta salad with refreshing mint and lemon flavors served on the picnic or patio table just seems right.
Make sure you look for Israeli couscous for this recipe. That's key for toddlers, IMO. Traditional couscous is pretty small and makes a horrendous mess when splattered on the floor, which inevitably some of this will be. Israeli couscous is bigger, about the size of small pearls, a lot easier to keep on your spoon and in your mouth, and more fun to chew.
Israeli Couscous Salad (from Weelicious)
Prep time: 5 mins.
Cook time: 12 mins.
You'll need:
1 cup Israeli couscous
1 1/2 cup water
1/2 tsp. salt
1 small yam, peeled and cubed
1/2 cup dried cranberries
1 tbsp. fresh mint, chopped
1/4 cup pine nuts (omit for younger toddlers)
1 tbsp. lemon juice
1 tbsp. olive oil
Make it:
1. Bring the water to a boil, add the couscous and yam, cover and reduce to a simmer.
2. Cook for 12 minutes.
3. Combine all the ingredients and serve.
