
Making balanced and delicious lunches for kids can be a challenge. There’s nothing worse than spending time and energy packing a lunch for your little one, only for them to come home and have almost everything left in their lunchbox. Putting together creative lunches that kids will actually enjoy is essential, which is why we suggest getting kids involved in the process. Ask them what they want to eat, bring them grocery shopping with you, have them help pack their own lunches, and keep meals balanced with Libby’s Vegetable Cups! When kids participate, they’ll be excited to eat their lunch every day. When it says Libby’s on the label, they will love it on their lunch table.
We invited moms to challenge their “Little Chefs” to put together creative lunches using Libby’s Vegetable Cups. Here’s one of our favorite recipes:
Sandwich-on-a-Stick
Things are about to get messy in the cutest way possible! Whether you have a picky eater, or one who eats everything under the sun, Libby’s Vegetables makes it easier than ever to give kids hands-on experience in the kitchen. In the spirit of back-to-school season, Andrea from @the.bradshaw.bunch challenged her kids to create their perfect school lunch featuring a Libby’s Vegetable Cup of their choosing. Since her Little Chefs are on the younger side, we decided to keep things easy, and kid-friendly with these yummy sandwiches on a stick.

Serving Size: 3 – 4 people; yields 8 sticks
Ingredients:
- 2 slices of whole grain bread
- Peanut butter (can substitute if you have peanut allergies in the home)
- Strawberry jam
- 1/2 cup of blackberries
- 1/2 cup of green grapes
- 1/2 cup of strawberries, sliced
- 1/2 cup each of cheddar and pepper jack cheeses, cubed
- 4 slices smoked turkey breast lunch meat (or any other lunch meat you prefer)
- Bamboo skewers (trim if needed to fit into the lunch container)
- Mustard (optional)
- Mayo (optional)
- Yogurt
- Granola
- Honey
- 1 (4 oz.) vegetable cup, Libby’s Mixed Vegetables
Instructions:
- Prepare a PB&J and cut it into bite size pieces.
- Alternate adding fruit, sandwich cube, cheese, and lunch meat onto each bamboo skewer.
- Serve with mustard or mayo on the side for dipping, if desired.
- Make a side of yogurt topped with granola and a drizzle of honey.
- Add a Libby’s Mixed Vegetables Cup to the lunch box.
