It's been over 50-degrees all week, hellooo warm weather!
Okay, so I'm jumping the gun a little here, but after a brutal winter full of snow storms, the fact that it's supposed to be 70-degrees here in New York this weekend has me doing my happy dance, and I am already thinking of frozen cocktails.
One of my favorite frozen drinks is the strawberry daiquiri. My girlfriends and I used to get virgin daiquiris at the local TGI Fridays when we were younger … we thought we were hot stuff. And it was the very first drink I (legally) bought. So yeah, the frozen strawberry daiquiri and I go way back and I have perfected my daiquiri-making skills over our long courtship.
Not hating on the pre-made mixes (let's face it, sometimes mama just needs a drink … quick), but if you want a good quality daiquiri, from scratch is the way to go:
- 6 cups ice
- 1/2 cup superfine sugar
- 5 ounces fresh strawberries
- 1/8 cup lime juice
- 1/2 cup lemon juice
- 3/4 cup rum
- 1/4 cup lemon-lime flavored carbonated beverage (I like using Fresca)
In a blender, combine ice, sugar and strawberries. Pour in lime juice, lemon juice, rum and lemon-lime soda. Blend until smooth. Pour into glasses and serve. Makes eight.
Want a virgin version? It's just as good without the rum. Yum!
