If you ask any mom, one of the best parts of summertime is how absolutely simple meals can be. You can really get away with almost anything on a day full of summer fun when your kids are happy (and too exhausted to complain). It's so hot people rarely want a whole big meal, and it's a good time of year to just buy a rotisserie chicken from the grocery, shred it, and throw it into super-easy salads and cold pastas for the next five days.

The produce is at its peak, with big summer flavors such as tomatoes and basil hitting their season and imparting all sorts of delicious flavors into any dish we choose.
