I love giving homemade gifts to my friends and family during the holidays! These mini cinnamon coffee cakes (the recipe is my mom's) make festive, thoughtful gifts.
For as long as I can remember, my mom has baked several batches of mini loaves of sour cream coffee cake (swirled and topped with cinnamon and brown sugar) at the start of each holiday season. She wraps them individually in plastic and aluminum foil and pops them in the freezer.
Whenever she needs a small gift for someone during the holidays, she takes a couple out of the freezer and ties a festive ribbon around them or packages them in a holiday bag. (She also does this with homemade chocolate chip banana bread.) I've continued the tradition because people love receiving such a thoughtful, homemade gift. Plus, the coffee cakes are delicious!
And if there are any extra loaves? We get to eat them for breakfast on Christmas morning (but only AFTER opening presents, of course)!
Sour Cream Coffee Cake With Cinnamon and Sugar
(Makes 4 mini loaves, 2 large loaves, or 1 bundt cake)
1 cup butter
1 cup white sugar
2 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
1 teaspoon vanilla
(For topping)
1/2 cup brown sugar
2 teaspoon cinnamon
1/2 cup chopped walnuts
Cream butter, white sugar, and eggs in large bowl. Combine sour cream and vanilla. Add to butter-sugar-egg mixture.
In another bowl, sift flour, baking powder, baking soda, and salt. Gradually, add flour mixture to sour cream mixture, stirring until just combined.
For topping, combine brown sugar, cinnamon, and walnuts in small bowl. Put 1/2 of the dough into buttered, floured loaf pans. Sprinkle 1/2 of topping over dough. Put remaining dough over toppings. Finish with remaining topping. Bake at 350 until toothpick inserted into the center of the cakes comes out clean, about 45 minutes.
