Healthy Breakfast: Scrambled Egg Whites

Did you know that you can make scrambled eggs in the microwave? I've been making 'em this way for years and never thought twice about it until a friend of mine watched me do it and was truly fascinated…she had no idea scrambled eggs were so easy—and fast!—to make.

I know that lots of us are trying to recover from the holidays and looking for healthy breakfast ideas in the new year. Scrambled egg whites are a great way to get healthy protein without a lot of fat. Plus, they take about 3 minutes to microwave…so for everyone with their "I don't have time for breakfast" nonsense? I don't want to hear it!

When I'm being really good, I eat them with a slice of dry whole wheat toast and a piece of fruit. But every once in a while, I'll scramble them with a little low-fat shredded cheese and make an egg sandwich using ketchup and an English muffin. Yum!

Scrambled egg whites

2 egg whites

1 tablespoon of milk or water

Salt and pepper to taste

In a shallow dish, beat egg whites and milk/water lightly with a fork until just combined. Microwave for 1 minute on half power. Remove dish from microwave and stir eggs with a fork. Microwave for 1 minute on half power. Remove and stir again. Microwave for 30 second intervals on half power until eggs reach a desired consistency.
