Lunches They’ll Love: Back-to-School Chicken Meatballs

Back-to-school season is upon us, so it’s time for parents to start thinking about creative school lunches. One of the best ways to make school lunches your kids will actually enjoy is by getting them involved in the process. Gladys and her daughter Lexi love getting in the kitchen together to make Lexi’s school lunches. One of their go-to lunches is chicken meatballs, complete with sides of fresh fruit, pretzels, and Libby’s Vegetable Cups. Ingredients:

Ready-made chicken meatballs (6 pieces)
Teriyaki sauce (2 tbsp)
Libby’s cut green beans vegetable cup
Strawberries (2)
Blueberries (handful)
Pretzels (handful)

Additional items needed:
Bamboo picks
Kids bento box

Directions:

  1. Gather all ingredients plus bamboo picks and a lunch container. We prefer a bento box with a dipping sauce compartment.
  2. Parents can slightly warm up ready-made chicken meatballs. Ensure meatballs are room temperature and completely safe to touch.
  3. Have the kids place chicken meatballs onto the bamboo picks. Our bamboo picks allow for 3 chicken meatballs per pick.
  4. While the kids work on the meatballs, parents can slice strawberries and place them onto a single compartment.
  5. Parents can also place blueberries and pretzels onto single compartments.
  6. Have the kids add the teriyaki sauce into the dip compartment. Assistance might be needed.
  7. Have the kids choose a side of Libby’s corn or cut green beans vegetable cups and add them to their lunch bag.
  8. Lastly, have fun!

Tips:

Wash and slice fruit the night before. Place items in clear containers so they’re easy to find and you can just grab-and-go. The best part of this lunch idea? Steps 3-8 can be switched between parents and kids! Have the kids choose which steps they’d like to help with. This also helps with creating an early interest in food and cooking.
