
Making balanced and delicious lunches for kids can be a challenge. There’s nothing worse than spending time and energy packing a lunch for your little one, only for them to come home and have almost everything left in their lunchbox. Putting together creative lunches that kids will actually enjoy is essential, which is why we suggest getting kids involved in the process. Ask them what they want to eat, bring them grocery shopping with you, have them help pack their own lunches, and keep meals balanced with Libby’s Vegetable Cups! When kids participate, they’ll be excited to eat their lunch every day. When it says Libby’s on the label, they will love it on their lunch table.
We invited moms to challenge their “Little Chefs” to put together creative lunches using Libby’s Vegetable Cups. Here’s one of our favorite recipes:
This back-to-school season, Libby’s Vegetables is empowering kids to let their creativity shine in the kitchen by packing their own balanced lunches. Jodi from @thejodismith challenged her “Little Chefs” to be independent, think creatively, and branch out to come up with a meal that they’re truly excited to eat at school. To guide (and gamify) her kid’s free reign of the kitchen, Jodi introduced bingo cards with must-have food groups to feature alongside a Libby’s Vegetable Cup of their choosing. Emmy’s Turkey Burrito

Serving size: 1
Ingredients:
- Deli sliced honey roasted turkey, quantity to taste
- 1 wedge spreadable Swiss cheese
- 1 tortilla
- Strawberries
- 2-3 pieces salami
- Mixed nuts
- 1/3 cup cottage cheese
- Libby’s Diced Carrots, 4 oz. Cups
Instructions:
- Spread Swiss cheese onto a tortilla.
- Layer on some honey roasted turkey slices.
- Roll it into a burrito.
- Add strawberries, salami, nuts, and cottage cheese on the side.
- Add Libby’s Diced Carrot Cups to make a perfect balanced school lunch.
Tucker’s Bagel Bites

Ingredients:
- Strawberry cream cheese
- Cinnamon raisin bagel
- Grapes
- Pistachios
- Pepperoni
- Libby’s Whole Kernel Sweet Corn, 4 oz. Cup
Instructions:
- Spread strawberry cream cheese on a bagel.
- Make into a sandwich or eat open faced.
- Add grapes, pistachios, and pepperoni on the side.
- Add Libby’s Whole Kernel Sweet Corn Cup and enjoy!
Crosby’s Granola Grub

Ingredients:
- 1 tortilla
- Strawberry cream cheese
- Granola
- Peanut butter
- 2 slices raisin bread
- Grapes
- 1 string cheese
- Libby’s Mixed Vegetables, 4 oz. Cup
Instructions:
- Spread strawberry cream cheese on a tortilla.
- Sprinkle granola on top.
- Roll up the tortilla like a burrito and slice in half.
- Spread peanut butter on a slice of raisin bread.
- Add second slice of raisin bread on top to make a sandwich, cut as desired.
- Add side of grapes and string cheese.
- Add Libby’s Mixed Vegetables Cup and enjoy!
