Gluten-Free Fried Chicken as Good as the Real Thing

Happy National Fried Chicken Day! After going gluten-free, I openly mourned for fried chicken. Living close to a Roscoe's Chicken & Waffles that I had never managed to visit didn't help. Neither did the constantly thwarted plans my sister-in-law and I had to go to the best fried chicken place in South Central LA. Which is why I was inspired to figure out some fried chicken recipes that I could do at home. 

Luckily, I'm not the only celiac who is in need of a fried chicken fix. Here are three great gluten-free fried chicken options when you need a visit from the Colonel.

Fried Chicken à la GF Rice Chex

I love the gluten-free Rice Chex for breakfast. It's one of the few breakfast cereal options I have left, and if you're eating rice, shouldn't it be gluten-free? Chex thought so too, so as of this year, they went g-free. Now you can use those Rice Chex to coat your chicken breasts, and fry away! Mmmm, crunchy.

Super Bowl Style Fried Chicken Tenders

Leave it to a mother of a gluten-free boy to make the perfect snackers for a Super Bowl party. Using gf flour and the secret ingredient of olive oil, this recipe pleased a crowd of gluten-eaters.

Southwestern Tortilla Chip Fried Chicken

And this is the one I'm going to be making today in celebration of National Fried Chicken Day. I usually use corn starch when I'm frying chicken g-free, but this genius of a woman added ground up tortilla chips and chili powder to her recipe. Yes!

April's Method of Frying Chicken Like Her Grandma

While I'm inspired by all of the above, if I want to do a fast fry, here's how I do it the g-free way.

Ingredients

2 drumsticks, 2 breasts, 2 thighs (at least, feel free to do more!)

1 cup corn starch

2 eggs

1/4 cup milk

1 teaspoon pepper

1 teaspoon salt

Canola oil

1. Beat eggs and milk in medium bowl, then add salt and pepper.

2. Wash chicken parts, then let soak in egg mixture for at least 10 minutes.

3. While chicken is soaking, pour canola oil in large skillet (or use a deep fat fryer, if you've got it) to about 1/2 inch high. Heat oil on medium.

4. Dredge in corn starch then transfer to hot oil. Fry on each side until brown and crispy.
